Characteristic:

White or off-white crystalline granule or powder with a cool sweet taste that is not easy to disappear. It's about 250-350 times sweeter than cane sugar. The lowest sweet density that can be felt is 0.002%. There is a little aftertaste when the concentration is too high. Its melting point is 196-198c. It is heat stable and acid/alkali stable (PH3-9). For example, if we add it into soft drink of PH3.0 for 30 days in room temperature, there is no change at all. The solubility in water is about 0.12%. It is quite easy to dissolve in ethanol. As a non-fermentable sweetener, it is quite suitable for the food that is not easy to sterilize by heat, which doesn't cause maillard reaction and keep finished product white. Among natural sweetening agents, its taste is quite similar to that of cane sugar. Its molecular weight is a little large and penetrability is poor, which is its shortcoming. Stevioside appears the largest absorbing peak value at 210nM wavelength on ultraviolet-spectrometer, which can be used as quantification standard.

Application:

As a natural sweetening agent for no calorie food, it has the function of lowering blood pressure and promoting metabolism as well as treating hyperacidity. It is always used as sweetening agent for licorice or cane sugar and always used with citrate sodium to improve the sweet taste, which is mainly applied in bitter drinks, carbonate drinks, candied fruits, fried food, salted and dried foods, dental hygiene as well as tobacco and etc.
