Xylo-oligosaccharide (XOS) is a sort of functional polysaccharide composed by 2~7xylose (xylobiose, xylotriose, xylotetraose, xylopentose, xylohexose, xyloheptose)molecules with β (1~4) glycosidic bond.
Chemical Name: β-1,4 - (D- pentose)nn=1~7
The sweetness of xylobiose from XOS is about 40 percent of cane sugars, its sweetness and flavor are similar as cane sugars.
Comparing with other oligoses, the outstanding characteristic of XOS is of best stability.
Test shows that XOS can keep almost 100% under the condition of pH2.5~8.0 and 80~100 for one hour.
